Sandwich Your Leftovers

Nothing beats a gathering around the table on a Friday afternoon around a steamy pot of Maqlouba at Jido’s! However, leftovers from this dish inspired me to make Maqlouba sandwiches! They are tasty and yummy!
Maqlooba Sandwich
(Makes 4 flatbread sandwiches)
Ingredients
1 large aubergine, sliced lengthwise
2 chicken breasts (optional)
½ cauliflower (small), cut into small florets
Cinnamon, turmeric, salt and pepper
1 large potato, cut lengthwise like french fries
1 large tomato, chopped
Yoghurt for spread
4 Arabic pita bread
Directions
1. Coat aubergine with a dusting of cinnamon and a sprinkling of salt and pepper
2. Butterfly the chicken breasts (cut through across the breast and open out flat). Coat in turmeric powder and cumin seeds. Cover and refrigerate until needed
3. In a pan, add some olive oil and fry the cauliflower florets until softened and golden
4. Drain on kitchen paper towel. In the same oil, fry the aubergine slices in batches and brown both sides
5. Fry the potato until lightly golden and tender to the touch, then place on kitchen paper towel to drain the oil
6. Lower the heat slightly and shallow-fry the chicken breasts in the remaining oil, constantly turning to achieve a crisp all-over coating (approximately six minutes)
7. Cut into the chicken to check whether it is fully cooked
8. Slice the chicken breast into strips to reveal the white of the chicken (optional)
9. Layer all ingredients into the pita bread spreading the youghurt
10. Wrap in paper or foil and serve
You can add some shredded parmesan cheese on top if you like
