Sugar-Free Apple & Cinnamon Muffins
A guilt-free dessert for all to enjoy!

Apple muffins are a delicious and nutritious breakfast or snack option for people with diabetes. They are made with whole wheat flour, apples and other healthy ingredients and they are sweetened with sugar substitutes such as stevia or sucralose.

These yummy apple muffins are a good source of fibre and vitamins and they are low in calories and fat.

Sugar-free Apple & Cinnamon Muffins
Serves : 12 muffins
Preparation Time: 20 minutes
Baking Time: 15 – 20 minutes   

Ingredients

  • 1 ⅔ cups whole wheat flour
  • 2 ½ tsp baking powder
  • 1 tbsp stevia or sucralose
  • 1 tsp ground cinnamon
  • ½ tsp sea salt
  • ¼ tsp nutmeg
  • ⅔ cup almond milk
  • 2 eggs, lightly beaten
  • ¼ cup reduced-calorie margarine, melted
  • 1 cup minced apple
  • Nuts (optional)

Tip: this recipe requires an electric stand mixer. If not available, you can use an electric hand mixer or a hand whisk

Directions

  • Preheat oven to 175° Celsius
  • Line a 12-cup muffin tin with paper liners
  • In a large bowl, whisk together the flour, baking powder, stevia, cinnamon and salt
  • In a separate bowl, whisk together the eggs, almond milk, margarine and the minced apple
  • Add the wet ingredients to the dry ingredients and whisk until combined. Do not overmix
  • Spoon the batter into the prepared muffin cups, filling each cup about 2/3 full. You can add thin slices of apple on top of the muffins
  • Bake for 15 – 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely
