Summer Time Entertaining

This healthy and easy to make homemade hummos is perfect for summertime parties and gatherings!

Roasted Garlic & Red Bell Pepper Hummos

Ingredients
2 large red bell peppers, seeds removed, cut in halves
6 cloves garlic, unpeeled
1 tbsp olive oil
2 cups cooked chickpeas
3 tbsp tahini
1 lemon, juiced
1 tbsp olive oil or more if desired
1 tbsp cold water
2 tsp balsamic vinegar
½ tsp paprika powder
½ tsp salt

Optional garnish
Ground cumin
Paprika powder
Roasted chickpeas
Roasted red bell pepper from a jar

Directions
1. Preheat the oven to 250°C
2. Add the bell pepper and garlic to a parchment-lined baking tray. Toss with oil, and bake in the middle rack of the oven until the garlic peel is golden, and the bell pepper is lightly charred, about 25 minutes. Stop to flip the bell peppers once halfway
3. When the bell peppers have cooled enough to handle, remove any charred bits from them, if desired. Remove the peel from the garlic cloves
4. Place all the ingredients in a food processor and blend on high until well combined until creamy, stopping to scrape down the sides as needed. The longer you blend, the creamier the hummos becomes
5. If you’d like the hummos even creamier, add more olive oil and/or tahini. If you’d like the hummos to be zestier, add more lemon juice
6. Plate, garnish, and serve!
