This vegan pumpkin lentil soup is packed with nutrient-rich ingredients. Pumpkin lends creaminess, while the lentils add a velvety texture and extra protein.
It is everything you want in a soup: it’s hearty, bursting with flavour and pairs perfectly with your favourite bread.
Pumpkin Lentil Soup
Ingredients
1 cup brown lentils
1 cup pumpkin, cubed
2 carrots, peeled
1 small onion, diced
2 cloves garlic, crushed
1 tsp salt
1 tsp cumin
5 cups vegetable broth or water
1 tbsp olive oil
Bread pieces and pumpkin seeds for garnish
Directions
1. Saute onions and garlic in olive oil
2. Add lentils and pumpkin pieces
3. Season with salt and cumin
4. Add broth and simmer on low heat until cooked
5. Mix with a hand blender and simmer for another 15 minutes
6. Serve with baked bread pieces and pumpkin seeds
