Green for Spring!

This flavourful salad is topped with sweet apples, crunchy walnuts and tossed in a tangy balsamic dressing. It makes a great salad for springtime gatherings, and I love how it comes together in just minutes!

Green Apple & Rocca Salad


5 bunches baby Rocca, cut up
2 green apples
½ cup walnuts
½ cup cranberries
Pomegranate seeds (optional)
Juice of half a lemon
1 tbsp balsamic vinegar
1 tsp salt
1 tsp oregano
1 tsp summaq

Put Rocca topped with apple slices dipped in lemon juice in a wide salad bowl. Add walnuts and cranberries. Wisk dressing ingredients well and drizzle on salad before you serve
