 This beautifully bright carrot ginger soup is the perfect balance of sweet with a touch of spice. You’ll want to make it again and again, especially since it’s a healthy, hearty dish that’s ready in less than half an hour!

Gingered Carrot Soup
1 tbsp butter
5 large carrots, peeled and chopped
1 onion, chopped
4 cups chicken stock
Salt and pepper to taste
½ tsp fresh ginger, peeled and finely chopped
½ tsp cinnamon
¼ tsp nutmeg
1 cup cooking cream


  1. Heat butter in a deep saucepan
  2. Add onions and carrots until they soften a bit
  3. Add salt, pepper, ginger, cinnamon and nutmeg
  4. Add chicken stock and simmer until carrots are done
  5. Mix all with hand mixer
  6. Add cream and simmer for another 10 minutes
