This beautifully bright carrot ginger soup is the perfect balance of sweet with a touch of spice. You’ll want to make it again and again, especially since it’s a healthy, hearty dish that’s ready in less than half an hour!
Gingered Carrot Soup
Ingredients
1 tbsp butter
5 large carrots, peeled and chopped
1 onion, chopped
4 cups chicken stock
Salt and pepper to taste
½ tsp fresh ginger, peeled and finely chopped
½ tsp cinnamon
¼ tsp nutmeg
1 cup cooking cream
Directions
- Heat butter in a deep saucepan
- Add onions and carrots until they soften a bit
- Add salt, pepper, ginger, cinnamon and nutmeg
- Add chicken stock and simmer until carrots are done
- Mix all with hand mixer
- Add cream and simmer for another 10 minutes
