Here’s how I make our local sweet treasure suitable for the summer days!
Knafeh Ice Cream
Ingredients
1 package knafeh dough
3 tbsp ghee or butter
1 tsp orange food colouring (you can mix yellow with two drops of red if you cannot find orange)
½ cup sugar syrup
1 package Arabic ice cream roll
Pistachios for garnish
Directions
1. Mix ghee and food colouring and set aside
2. If you want this to be fine knafeh, you can break the dough in the food processor but for this dessert, I like it coarse
3. In a bowl, mix the ghee and colouring with your dough gradually so your entire dough is covered
4. Using a muffin tin, grease with butter and fill in the tins with equal amounts of dough
5. Bake for 20 minutes at 180°C then drizzle with cooled sugar syrup just so
it doesn’t crumble
6. Once everything is completely cooled down, cut the ice cream roll into equal rounds and place in between two pieces of baked knafeh
7. Garnish with pistachios and serve
