Broccoli & Cheese Egg Muffins
Serves :4 Prep time: 5 minutes Cooking time: 30 minutes
Get ready to transform your breakfast game with a recipe that’s not only tasty, but also packed with healthy goodness. Introducing our “Broccoli Muffin Eggs” a delightful twist to your morning routine that’s perfect for teens looking for a nutritious yet scrumptious start to their day.
Ingredients
4 cups broccoli florets
4 large eggs
¼ cup milk
1 tsp olive oil
¼ cup shredded cheddar cheese
2 tbsp parmesan cheese (optional)
1 tbsp flour
Salt and pepper to taste
Olive oil spray
Directions
1- Preheat oven to 250° Centigrade
2- Boil the broccoli for 3-5 minutes
3- When broccoli is cooked, cut into small pieces and add olive oil, season with salt and pepper, mix
4- Spray a nonstick muffin pan with oil and spoon broccoli mixture evenly into the muffin tin
5- In a medium bowl beat eggs, cheese, milk, and salt and pepper
6- Pour into the broccoli mix until the muffin tin is ¾ filled
Top with more grated cheese and bake in the oven until cooked and top is golden in colour.
Serve immediately
Tip : You can wrap and store in the fridge for one week
Veggie Pasta
Picture this: A medley of fresh vegetables bell peppers, cherry tomatoes, broccoli and more sauteed and tossed with al dente pasta, all coated in a light savoury sauce. This Pasta has a burst of freshness in every bite, providing a wholesome meal that’s both satisfying and nutritious.
Serves :5 Prep time: 19 minutes Cooking time: 11 minutes
Ingredients
One packet penne pasta
¼ cup olive oil
1 large carrot, peeled and sliced
2 cups broccoli florets cut into small pieces
1 medium bell pepper sliced
1 medium zucchini sliced
3 cloves of garlic minced
1 cup cherry tomatoes halved
2 tsp oregano
½ cup pasta water
2 tbsp lemon juice
½ cup Parmesan (shredded)
For garnish minced parsley
Directions
- Bring a large pot of water to a boil. Cook the pasta according to the package instructions, reserve ½ a cup of pasta water for later
- Heat olive oil in a skillet over medium high heat
- Add red onions and carrots and sauté for 2 minutes
- Add broccoli and bell pepper sauté for another 2 minutes
- Add zucchini then sauté to 2-3 minutes until veggies are softened
- Add garlic, tomatoes and oregano and sauté 2 minutes longer
- Pour veggies into serving bowl add drained pasta, drizzle in lemon juice, season with salt to taste and toss while adding pasta water to loosen as desired
- Toss in the Parmesan and parsley and serve immediately

Ingredients
3 cups mixed frozen berries, raspberries, blueberries, blackberries thawed slightly
1 cup fresh strawberries sliced
1 cup light vanilla yogurt
1 tbsp sugar or honey
½ cup orange juice or you can use milk if you like
Directions
- Add all the ingredients in the blender. Blend until well combined
- Pour into glasses and enjoy
- If you like it thicker use less juice or milk
