Roasted Eggplant Salad


1 large eggplant
1 tomato, finely chopped
1 sweet pepper, finely chopped
1 clove garlic, minced
Juice of half a lemon
1 tsp salt
Pinch of mint leaves, finely chopped
1 tsp pomegranate molasses
Olive oil

1. Using a sharp knife, make three to four holes in the eggplant, cover with aluminium foil and bake for 40 to 50 minutes or until soft from the inside

2. Remove bulb and chop well

3. Add all other ingredients and mix well

4. Drizzle olive oil on top. You can also garnish with some pine nuts

4 veal steaks, cut into medium-sized squares
One big onion, grated
2 cloves garlic, grated
2 tbsp olive oil

For the tomato sauce

1 onion, grated

1 garlic, diced

2 large ripe tomatoes, grated

1 tbsp tomato paste

Pita bread slices

For the yoghurt sauce

1 cup yoghurt

Pinch of salt

1 tsp dried mint


1. Soak steaks in onion, garlic, salt and olive oil for four hours

2. For the onion sauce, sauté onion and garlic, then boil with tomatoes and tomato paste. Then simmer for 15 minutes to use later

3. For the yoghurt sauce, mix yoghurt with a pinch of salt and the dried mint

4. Before serving, cook the steak piece on a non-stick skillet until golden on both sides

5. Spread pieces of pita bread on a plate

6. Place steaks on top and then add spoonfuls of tomato sauce

7. Drizzle yoghurt sauce on top

Turkish Coffee

It may be strange to include this recipe, but you’d be surprised by how many people don’t know how to make it. The main tip for a delicious cup of coffee is that it shouldn’t be heavy or light

1 small cup water
1 tsp grounded coffee
½ tsp sugar (optional and according to taste)

1. Boil all the ingredients in a cezve (ibrik)

2. You can remove froth and pour it in coffee cups for people who love it

3. Boil coffee again for an extra three minutes, then pour in cups
