Dairy-Free Banana Bread

Grace Agoubi (13) inspired us to try going vegan for a week! She shows Jamal (16) and his sister Layan Dawani (10) how to serve up this healthy, easy, delicious non-dairy banana bread.

Vegan Banana Bread 

Ingredients

2 cups all-purpose flour

1 ½ cups bananas, mashed

1 cup organic Earth Sugar

(for vegans)

½ cup coconut oil

¼ cup soy milk

1 tsp apple cider vinegar

1 tsp vanilla

¾ tsp baking soda

½ tsp salt

½ cup walnuts, chopped

Directions

1. In a large bowl, mash the bananas

2. Measure out and then mix in the sugar and coconut oil

3. Pour in the vanilla and stir until the mixture is smooth

4. Pour in the soy milk and vinegar

5. Add the flour, baking soda and salt

6. Stir until moist, then add walnuts

7. Preheat oven to 170C

8. Grease the bottom of the pan, then pour in the mixture

9. Bake the loaf for one hour and 10 minutes

10. Cool for 10 minutes, then remove from the pan

11. Set aside for an hour to cool before serving

Baking tip: Is your cake done? While still in the oven, insert a toothpick in the centre of your cake. If nothing sticks to the toothpick, the cake is ready to be taken out of the oven
