Fresh Summer Veggie Rolls are perfect for the spring, summer, and anytime you want to enjoy the fresh deliciousness of veggies.


For the rice paper

1 cucumber, cut in half and lengthwise into smaller cuts

1 carrot, cut in half and lengthwise into smaller cuts

Romaine lettuce leaves

Avocado, cut into thin slices

Any other vegetable of your choosing

Sesame seeds for garnish

For the peanut sauce

½ tsp ginger powder

½ tsp garlic powder

½ cup creamy peanut butter

2 tbsp low sodium soy sauce

1 tbsp lime juice

1 tbsp brown sugar


  1. Fill a large bowl with warm water and dip each wrapper for a few seconds until it softens
  2. Place ingredients across the centre, leaving the sides uncovered
  3. Fold the sides inwards, then roll tightly like a spring roll
  4. Roll in sesame seeds for garnish
