It’s pumpkin season so we’re giving you some yummy yet healthy pumpkin recipes. These autumn pumpkin favourites are simple to create, with options for every meal.

 

Pumpkin Smoothie

A nutritious blend to boost your energy, especially if you’re feeling tired or down

Ingredients

1 cup cooked pumpkin flesh

¼ cup walnuts

1 tbsp honey

1 tsp cinnamon

¼ tsp ginger

 

Directions

Mix all ingredients in the blender with ice and a bit of water. You can add some milk if you prefer

 

Pumpkin Pumpkin Rice

This rich dish is great for big family gatherings!

Ingredients

1 big pumpkin cleaned, opened from the top and seeds removed

3 tbsp butter

2 cups rice

½ kg minced meat

1 cup peas

2 cups beef or chicken broth

Salt, pepper, all spice, cinnamon, cardamom to taste

Fried almonds and pine nuts for garnish

 

Directions

  1. In a pan, cook minced meat and seasonto taste
  2. Add peas and sauté with meat
  3. Add rice and broth and leave to simmer until half cooked
  4. Rub butter in and out of pumpkin
  5. Put rice, meat and pea mixture in the pumpkin and close it
  6. Wrap it with three folds of foil paper then place in a water bath in a big oven pan
  7. Bake for two hours at 175°C
  8. Garnish with almonds and pine nuts

Classic Pumpkin Pie

This mouth-watering autumn pumpkin pie is perfectly flavoured with a trio of spices

 

Ingredients

For the pie crust

¾ cup butter

½ cup sugar

1 egg

1 tsp vanilla

1 ½ cups flour

Pinch of salt

1 tbsp cold water

 

For the filling

1 1/2 cup mashed pumpkin, cooked

½ cup brown sugar

1 egg

1 tsp vanilla

1 tsp cinnamon

¼ tsp ginger

¼ tsp nutmeg

½ cup heavy cream

3 tbsp flour

 

For garnish

Walnuts or pecans, crushed

Whipped cream

 

Directions

  1. For the pie shell, beat together the butter and sugar and then add the egg and vanilla. Gradually add flour and water. Knead the dough well and refrigerate for 30 minutes. Spread into pie pan
  2. Mix all filling ingredients and pour into pie crust
  3. Bake for 30 minutes at 175°C
  4. Set aside to cool and garnish with walnuts or pecans and whipped cream (optional)
